There are several recent threads on this to review. Running along the west coast you should always go north to south, you're on the ocean side for the best views and the prevailing winds are generally at your back in the mid day and afternoons. Morning winds are generally not as strong.
Here's the recent Cool Breeze Century put on by a local club, you can use any part of the return route to plot out your ride. Lucky for you there's a new bike path 85-89 mile markers where you used to have to ride on the freeway shoulder. Overall the route is pretty straight forward, keep the ocean on your right!
I'll give you my ride link as there are photos of the ride so you can see some of what you'll see along the way. You'll have to forward through many of them to get to the Santa Barbara and south photos.
