Boo on fixed gear. This bike is a classic and deserves to be treated with respect. The only reason to remove any OEM parts from this would be if you wanted to ride the frame but keep the parts less used. I could see stripping the bike entirely and replacing the group to save wear and tear on original parts. Or not. But don't just replace parts willy nilly ...or at all.
