Thanks for the info, I see a lot of roadies w/booties but don't see a lot of tourers' posts about them. I guess most tourers probably just wear warm socks but my Sidi bike shoes are snug in toe box already.
You can easily make a pair of Cordura nylon or leather booties. I like booties that COMPLETELY cover my shoe. That's so if I step in water the ice cold water doesn't get into the shoe via the hole for the cleat. I waterproof my leather booties with Dubbin the exact same stuff I use on my leather saddles.
