Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

Yes, and you have a 12T difference between the two outer chainrings which is why the front derailleur works so well. The OP's proposed 4T difference won't.
