When/if you decide to move to a road bike, I'd suggest that you look at a something in the gravel/adventure category - drop bar but with the ability to accommodate fatter tires. If I could only have one bike, it would be something along these lines (and then I'd slap some skinny, slick tires on it for rides when I plan to keep it on the pavement).

edited to add: I found my DB Haanjo (with 105) well on sale well under $1k.
