350, for me, just set the assist level (no matter the power of the motor) to where I'm pedaling about the same (sometimes more, probably sometimes less) than no assist and ride at that level. Maybe the 350w is better since it has less power, but the 500 is enticing and was the most powerful e-MTB that I've ridden.
