I was going to ask if you had kept the tubular wheels or if it was converted to clinchers, but you answered the question. I recently converted my '71 P13 back to tubulars and the ride is wonderful! I was amazed by the difference from the 27" Pasellas, which I felt was a nice ride in the first place.
On to your search/questions:
B) Chain: I'm not a purest so I run modern SRAM or KMC 8 speed chains on my Paramounts. They do aid shifting slightly due to their greater side to side movement which is designed for the 8 speed cassette. [MENTION=226065]Metacortex[/MENTION] or [MENTION=38510]Scooper[/MENTION] can probably give you original spec, but any Regina chain from the early '70s would be more than close to original.
C) Campagnolo Brake Pad Holders: I believe I have what you need in my stash of parts. I'll need to dig some and will try to do so in the next few days. My email is my user name plus the ubiquitous G-Mail ending.
D) Tubular Rims: Again, scooper and metacortex can nail this spec but IIRC the Schwinn Approved rim is original. Finding a matching replacement can be found. Watch ebay closely. But matching the Mavic would be an appropriate replacement.
