I fit bikes much the same now as in the 80s.
Trends in the 2000s were toward smaller frames with longer seatposts; those less flexible have more stem variations and spacer options than previously.
The 'endurance' trend and more recently 'gravel grinders' have moved us back toward larger tires and additional wheel options, ie 650b. However, there are more bicycle options now than ever before.
