The amount of grease a ball bearing hub will hold is self regulating. The wetting action of the grease on rolling balls will keep the bearing lubed, but any excess will be pushed out of the way, and weep out if there's no place for it to hide.

Like you, I prefer to over grease hubs, because it's easy and also ensures that I didn't under grease them.
