ETA: Oops, missed the bit about two pairs. Not that I need two pairs. And it sounds like a medium might be too big.
I'd say that the mediums would be good for you. The do run on the small side. If slightly big, you could use a belt or relocate the fly buttons inwards.
The socks I bought are amazingly warm. They are
Redhead over-the-knee "Wader" socks, available at Bass Pro Shops. They are mostly merino wool and are guaranteed for a year.
