The pedal cages are steel and might be pitted past the point of recovery. It looks like there was an alloy version of these pedals and I may try to find a set for this bike.

Ideally I'd like to work with as many of the original components as possible. I have a VGT Luxe I'm considering using but will probably stick with the V that came with it.
