I've been working on a 1982 Sequoia lately myself. Like you, I built it up with parts on hand to see how I'd like it. I liked it a lot. I just bought a new rear derailleur for it today.
Sounds like you are heading down the same path as me, and it seems like a good one so far. So far I really like the Sequoia and see it replacing a coupe of bikes.
