Think about all the mechanical stuff that is routinely left out in bitter cold, starting with the car you left the pedals in. Do car bearings get damaged because people live in Fargo, ND?
The only thing that can happen to your pedals when you freeze them is the grease stiffening, which may cause friction until they loosen up.
