Hmmm....

And I can readily find chainrings for my 40 year old crankset.

So, according to the specs on the bike, you should have a crankset:
Shimano Deore LX HyperDrive-C, 22/32/42 teeth

It always is good to check to see what is ACTUALLY ON THE BIKE as things can change over a bike's life.

Does it have some numbers on the back of it? FC-(something)? 5 bolts?

Anyway, once you get the exact crank model, you can get the "BCD" of the chainrings, then hunt for some new ones.

8 speed is usually a cassette, so you should be fine.

And pretty much any 8 speed chain will work.
