i second the voluptuous vegan (habitus' recommendation), and i'll add:
150 vegan favorites, jay solomon
simply vegan, debra wasserman
these two books have a lot of good ideas for "staple" meals -- mid-week, i-don't-feel-like-cooking-for-three-hours sort of meals.
habitus -- '97 was a good year to go vegan; that's when i did too.
