I built a new back wheel around a Velo Orange Grand Cru 130 mm touring hub, and Alex DH19 double walled rims, 36 spokes. This has worked well for me the last 3 years or so. The hub was a bit of a splurge. I suspect I could have done as well with Shimano 105, or Ultegra, but at this point I am committed.

Anyhow, there are fancier rims than the Alex DH19, but so far I have no complaints. Not that expensive, double walled with eyelets around the spoke holes, fairly ubiquitous, so shouldn't be too hard to find.

Make sure whatever you get, you check your dropout width and get a back wheel/hub that matches your dropout width. Current standard for road is 130 mm, and for mountain bikes, 135 mm.
