Bikes: too many bikes from 1967 10s (5x2)Frejus to a Sumitomo Ti/Chorus aluminum 10s (10x2), plus one non-susp mtn bike I use as my commuter

There are too many possibilities, but one that many overlook is tire pressure.

Most riders inflate front tires far too hard. This reduces the normal steering forces that keep a bike on track, while increasing the bouncing that knocks it off track. That shift in steering forces is what makes a bike feel twitchy.

Before making any complicated changes or adjustments, try dropping front tire pressure 20% from wherever it is now and see if it helps.
