It doesn't obligate you to use clip-in pedals after the fitting. It simply allows a more controlled fitting experience.

(FWIW, I am back to riding with clip-in pedals (albeit 2-bolt SPDs), and even with a range of motion limitation that means I have to twist inward to escape, it is still worth it.)
I like this idea. Clips for the sake of fitting at least. Maybe they've got some I can use just for the fitting. I do have a pair of cycling shoes from my sister's indoor spinning days, so that's taken care of.
