I honestly can't believe people are putting up such a fuss about beets. They're delicious! Roasted, they turn particularly sweet, like caramel--especially the skins. Borscht is wonderful if you've ever had it prepared well. I first had it served by some Russian/Ukrainian friends who served it with pelmeni (small dumplings) and an incredible vinegar and onion sauce. Washed down with some good Russian Vodka--what could be better?
