I'm sorry if I am being stubborn, but I still dont see how this is going to be that big/ expensive of a project.

Must I get Shimano M610 Deore type shifters and brake levers since my bike has Deore front and rear derailleurs. Can I not just get some cheaper sunrace shifter and levers? Is it more complicated than buying new shifters replacing them on the bar and sizing the cables properly?

How I am seeing it is: Replace the bar and stem. Attaching the shifters and brake levers, guide the cables to them cutting to size and connecting.
Thanks
