Can I substitute 27" wheels with 700?

Hi! I have a Nishiki Prestige that was converted to a single speed by the prior owner. It has the stock 27x1 Araya rims that are out of true and I'd like to know if I can replace them with modern wheels (700) before I have my LBS true the old wheels.
