If you switch to a cassette with bigger cogs to help you climb, there
will be bigger jumps between gears.
You currently have a 12-25 Sunrace. Almost all of the cogs are 2 teeth apart: 12,13,15,17,19,21,23,25. If you go to an 11-28 Sunrace or SRAM cassette, you'll have some 3-tooth jumps in there and even a 4-tooth jump: 11,12,14,16,18,21,24,28.
The most evenly-spaced 28-tooth cassettes I can find are the 11-28 Shimano CS-HG50 and CS-HG51 that csport recommended. Their spacing is 11,13,15,17,19,21,24,28. It's all two-tooth jumps until you get to the two largest cogs.

The CS-HG31 and CS-HG41 aren't available with big cogs smaller than 30 teeth. Those will give you easier climbing, but they'll also have bigger gaps between cogs. They also exceed the maximum cog size of your rear derailleur by enough that it might not work. The published specs for a 2300 rear derailleur show 26 teeth as the maximum cog. You can probably get away with exceeding that by one or two teeth, but the more you exceed spec, the less likely it'll work.
