I've had gel seat saddles (not real squishy ones) and found them very comfy.

I'd been looking for a new bike and while test riding about half dozen of them, I think I've hated nearly every saddle on the models that I tried.

I just bought a bike and put a Brooks B17 saddle and it, and it's as comfortable as my gel saddles. I only have about 50 miles on it, but I can tell it gets better with every ride. I hear others say they need a break in period; I was fine after my first ride.

Caveat here: I'm female and most of my rides are in the 12-25 mile range. Also, I ride on the roads and get off the saddle when the roads get bumpy. My rides are in the more "upright" position with upright touring type handlebars, not drops. I don't wear padded bike shorts.

I'm a "newer" bike rider, like you. Be comfortable. If you're comfortable, you will ride and be happy. You can always change your saddle as your tastes change.
