Bigger rings and cogs are more efficient and last longer. That said, I usually choose mine for other reasons. My good fix gear uses all 1/8" track gear. I am limited to 144BCD chainrings. I also do a lot of hill climbing on that bike, so I use as small a ring as practicable - 42 teeth. (41s do exist, at least in 3/32". I've been hearing about them for 40 years. Campagnolo made them, but not a lot. Given how rare they are, I see litlle point in looking for one. I did however pick up a 43, also Campy but in blue anodizing for the BMX market.
REDMASTA, the number of skip patches is a function of the gear ratio, not the ring and cog sizes, For example, 36-12, 39-13, 42-14, and 45-15 all have 3 skid patches. (And all are 81 gear inches.) If you have to have say an 81" gear and you cannot deal with 3 skip patches, you could use a bike with a different size wheel. (Say a 26" wheel with a 44-15.) Or you could use brakes.
