My saddle is basically plastic with no cushioning at all, suits me fine for stuff under 50 miles, but i've been getting into centuries and would be nice to have something a little more comfortable, and I'm also thinking something with a center cut out may be for me since my current seat puts the pressure on me making me constantly feel like i have to pee.
Saddles are tricky...not going to touch that subject. Each person has their own preference...really how it fits you. I ride a Fizik Alliante and love it but a lot of folks hate it. Go to your LBS and ask for a demo...they should let you have one for long enough to make a decision. Better then spending $300 on a whim!
