trekmogul - looks like you have a collection of very nice bikes. I want to offer some friendly pointers, as many here tend to be sarcastic (which sometimes doesn't come across well on the internet).
Disc wheels - you typically do not see these on road bikes. Actually, you pretty much never see them on road bikes. They look out of place. They also could be dangerous in a group ride, if a strong side wind hits the disc and moves the bike. But if it makes you happy (and you ride solo), go for it.
Lightweights - not sure if they have them in stock, but wrenchscience.com stocks a big variety of Lightweight wheels. They are also a great online shop to deal with, in my experience.
Tubular vs. clincher - when you get a flat, do you call for a ride or change it on the side of the road yourself? If you call for a ride, you might as well get tubulars (they will be much lighter). If you change them yourself, get the clinchers.
