Thats the way to do it, get on them both and ride them a good distance to get a feel of the seat and over all handling of the bike, a parking lot ride won't tell you anything. Go through all the gears, find a good area to test the brakes with a hard stop, and try to find a hill to see how they climb. Try to pick the bike that will need the least of (if any) upgrades. Most every new bike will need something, like a bottle cage, better grips, seat, etc. Also find out what the shops offer for service, some shops give 2 full tune ups, while some give lifetime brake and gear adjustments, and some give nothing.

Above all, have fun, and dont let a $20 off "buy it now" discount, be your final decision.
