That workout is way old school. Remember 42t small rings and corncobs were all they had for these same mountain roads you are going to ride. You'd do as well to invest in a 7400 DA drivetrain and push a big gear all the time. Certainly watch some old race films to see how their pedaling style differed so you don't hurt yourself. Ullrich would be the natural guy to zoom in on but his technique might be a bit too refined to pick up on easily.

Alternative is starting from a dead stop on half mile long walls above 12% and grinding it out from the saddle. Throwing a few of those in should be about right for what your coach wants and double as core work.
