I ride out on the trails at least once a week and will check out the camp grounds often. Last year I don't even think they got over half full most of the summer. The smaller camp grounds right next to it seems to be fuller, and they have Yurks you can rent to stay in but you have to reserve them early.
I will be camping, mostly because I can actually get a space. In winter I usually just stealth or wild camp. It is hot sitting in your tent though, especially after sweating your way to the site. Oh well, that's Florida.
