Sounds like the kind of stuff you should have figured out before...

What's the angle of the stem? You could get one with a larger angle so that the bars are even higher. I guess you could also look for longer cranks, which would allow the saddle to be a bit lower. Doesn't sound like hitting your belly with your knees will be an issue. Also, setting your saddle fore/aft position based on distance to the bars, not sure that's the best. Your best bet might be to pay someone to help you out.
