Welcome! I'm a little shorter and a little heavier than you, but have experience with some of those bikes. I used to own a Giant Cypress, ended up not liking it because I find that front suspension doesn't mix well with higher rider weight - I kept bottoming out, and instead of being a benefit that smoothed the ride, it just made pedaling more difficult. I think the newer one locks out, so you could lock it to avoid the issues, but then you've paid for a heavier bulky fork that does nothing for your ride.

I'd say the same for any of those that have front suspension.

My recent decision came down to the Giant Escape 2 vs the Trek FX2. I test rode both pretty extensively, because I liked both. In the end he Trek won for me because it just fit better, and I also experienced stellar service from the Trek store, which has continued after purchase. I received good service from the other LBS, but not to the level of Trek, and long term support is important to me.

Go to the LBS, ride as many as you can, and buy what feels best - that's the bottom line.
