I try to stay away from:
- Cotter pin cranks.
- Fauber/one piece cranks.
- Stems with protruding quill bolt.
But I can exceptions for a 50s Cinelli Speciale Corsa or Bianchi Campione del Mondo.
Cotter pins are sadly, lost technology. They work very well but few now know to deal with them and have the tools and cotters.
I stay away from protruding stem bolts because I have vivid memories of landing my sternum on my UO-8 bolt. Once burned, twice shy.
