I'd like to ask about this.

I'm not trying to challenge but sincerely interested as I'm thinking of switching from touring shoes I use for gravel and getting real MTB shoes.

Is there an issue specific to you which prevents you from finding good shoes <$300? Or am I just naive?

I would think that $300 would be plenty for a good pair of shoes, no?

Of course it's plenty for a good shoe, that's the problem. I want that good shoe for under $200 lol. My requirements: wide, carbon soled, BOA dials. That pretty much limits it to the high end market.
