Mustache vs. Porteur vs. flipped Northroad/Albatross Bars

Going from Modolo e2091 drops to a more upright bar on a '93 Trek 520 and wanting to keep road levers and barcon shifters.

I have a set of used generic alloy Mustache bars from the LBS to try and with an adjustable stem at minimum insert point and almost vetrical (7" above the locking collar), they are still slightly low and long in reach. I've researched stems and can get taller with slightly shorter reach, but wondering if somwthing like the Velo Orange Porteur or upside down Northroad/Albatross style bars would be a better fit?

I want to keep the look (path racer/porteur) and feel of a slight drop for the "flat" of the bars and they will be wrapped to provide mutiple hand postions. This bike will lightly loaded and used for day touring around the local country side and possibly on a 5 day supported tour (average 60 - 80 Km/day).

These are the (somewhat excessively) tall stems I've found online.
