You may want to try adding a Wolftooth road link to your set up. I have them on all my steel Eddy Merckx bicycles, and I can run up to a 36 tooth cog to spin up almost anything. Granted, I run Dura Ace 9000 11 speed, but I don't see why it wouldn't work with 105. They are fairly inexpensive, and work very well.
