Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

The reason otherwise all-Shimano equipped bike often have FSA cranks is purely a cost consideration. The FSA crank is far less costly for the manufacturer.

And yes, your Veloce crank will work fine.
