Especially as I never saw this thread before today, so it reads like a book.
Congrats on the build, ...and the beveled brake pads are fine as long as you periodically restore the bevel as it wears lower, which typically takes quite a while.
I've got a Blue/White Bottecchia Pro that I have yet to get on the road, mostly because of the old tubulars being in an extremely unsafe condition. I'll see about tossing some good wheels on it today and seeing if I can get around this small, hilly foothills town on it!
