You might as well spread the frame to 130 and then you'll have a lot of choices on wheels. You can run 7 on the back with a spacer on a 130 mm rear wheel.

The sun wheelset will works as well. You just need to pick up a 7 speed shimano compatible freewheel which is pretty much every freewheel sold today and that will work just fine with your shifters.
