I'm not sure if there's a good drop-bar triple electronic shifting setup--AFAIK only triple electronic is MTB designed for flat-bar levers? Brifters might be the easier setup. Haanjo EXP Carbon weighs a mere 10 kg/22 lb & that's with comfy fat tires. Haanjo geometry is probably more comfortable for touring than most carbon road/cross frames.

In re carbon wheels I found that 559mm/26" carbon wheels were very expensive with marginal weight saving. 622mm/700C etc might have more options but I think weight saving would still be low.

I wouldn't worry so much about carbon frame breaking. It happens, sure, steel frames can break too. My only gripe with carbon is it can limit bike's versatility.
