I am the same height (~210lbs) and had a Trek 7.2 with cromoly fork that worked great. When I bought a gravel bike I gave it to my dad (6'1" ~280lbs) to ride around and it suits him well. It was my 4th hybrid (all bought used) and it was my favorite of the bunch.
The MSRP on the Cannondale is $520 online, so I doubt the LBS will go below $480. I dont want to become that cheapo guy trying to haggle every price. It seems like $40 off would be a good deal. Wouldnt mind if they through in free service or a computer or something tho.

Yeah, I am starting to think that the preferred color as well as the chromoly fork may be well worth the $80 price difference between the Trek and Cannondale.
