As you are riding so long (you are) I think weight matters. I'd suggest a lighter foldable tyre. So a Conti GP4000 vs a Gatorskin.
I'd go a 25mm little tougher tyre as you are on the road so long.

Depends on price and convenience now. Softer tyres wear faster, puncture more easily (sometimes) and feel better. Latex tubes are nicer too and cost more and more difficult to use. Some here will suggest tubeless, I wouldn't. There are very many good brands.

For performance / less effort try 25mm wide, lighter/foldable, less flat protection (you may flat more, but seems roads are clear).

I like the Veloflex Master or the Corsa 25mm which is really a 24mm. For smooth road, low puncture situations (like yours) they are light and wear pretty well.

Continental GP 4000S II over the Gator Skins as you don't need that weight and flat protection - unless you like extra insurance.
