I don't think they make ceramic pads for bicycles. They might possibly make them for e-bikes but based on my experience with automotive ceramic pads I would never use them on a bicycle.

Your choice is resin (also called organic) or metallic (also called semi-metallic or sintered).

People will talk about metallic pads having less initial bite or organic pads wearing fast in wet and dirty conditions but for the riding described I would not have any anxiety over the choice.

The bottom line is probably price and noise. Organic/Resin are quieter.
