I agree with your reasoning about triples, but I also agree with Lazy about sticking with Campy. I built a bike with those 2014 Centaur shifters earlier this year and they work great. New Campy derailleurs can be expensive (and hard to find in silver), but you can find used ones in really good shape for a reasonable price.
