There is nothing in the world like a 10-15 minute off the cuff jam session, at random times, in the middle of a Dead concert. It sounds almost as good as fingernails on a chalkboard.
...that's the equivalent of the break between innings, to give you time to wander around, stretch, hit the bathroom, and score drugs on your way back to your seat. It serves a very useful purpose.
