You basically got it right, except that you will need to use a 10 speed SRAM mountain derailleurs with the 11 speed Road shifters--SRAM road uses Exact Actuation as does SRAM 10 speed mountain, but SRAM 11 and 12 speed mountain use X actuation, which has a great cable pull ratio.

Also be sure to check the chain wrap capacity and the maximum cog size of the derailleur you plan to use. For example, a 10 speed GX long cage derailleur has a maximum cog size of 36 and a chain wrap of 47. That gives you plenty of chain wrap, but if you want a bigger cassette, it may not run great. A Wolftooth goatlink can help out in this situation.

The gucci option would be using Shimano road Di2 brakes/levers/shifters with Di2 mountain derailleurs/drivetrain.
