Just pick the gear that you want. Take off the rear derailleur and shorten the chain so it fits the gear combo you have chosen. When you adjust the chain legnth, start with rear wheel set towards the front of the dropouts, that way you have some space to adjust the chain tension.

Did this for many years on a Schwinn 10spd that I used for a winter snow commuter. Never threw the chain.
