Examples, top of my mind:

Shaving. P&G is remaking vintage razors, selling them for big margins (I know, I set them up with manufacturers of some lines, all in the USA (SW Ohio, actually ).

Command line interfaces.

Music on vinyl.

Polaroid cameras.

What "old" technology or trends would I like to see become popular (that's a qualifier) on current products?

Stainless spokes and polished rims.
Non cushy bar tape.
The three-speed internally geared hub.
Affordable, leather-soled, goodyear welted shoes
Automatic watches (I have a few)
A phone that's pretty much only a phone.
A big, heavy, clicky keyboard, XT style.
Saddle shoes. Suede. Really.
Folks with enough respect not to force you to listen to their car audio from three blocks away.
Neighborliness

Maybe I'm just a truly grouchy retro-grouch.
Let me add:

-Banana seats
-Butterfly handlebars
-"Sissy bars" (are we allowed to use that term here?)

Turns out those old guys (most of them are dead now) that used to rave about their "one speed Schwinn cruiser bikes with balloon tires" being the best bikes ever made, may have been on to something.
