I've only used Sora 3500. It's not even as nice, in terms of feel, as the old 5700...but maybe I'm just biased against the hideous cable-coming-out-of-the-shifter thing.

My rear cassette on the Sora is a wide 11-32, so lots of big gaps. Eleven-speed 11-32 would take care of some of those gaps.
