Noob needs help upgrading some parts.

I was looking for a bike to ride with my family and after many weeks and I can't tell you how many hours of research I finally decided on a Trek Roscoe 7. I picked it up yesterday but Santa is going to be bringing it to me along with a Woom 3 for my 5yr old. so both are being stored in my parents garage.

Since I can't ride it for another month I'm thinking of upgrading some things but I haven't ridden a bike since the early 90's when I was a kid. So when I say noob, I mean it. For the first month I'm going to be riding around the neighborhood getting my stamina up and getting my body and butt use to riding and then I plan to ride some light trails near my house in Central Florida (UCF).

Below are the specs of the Roscoe 7.
- I'm 6'1" / 230lbs.

So far I bought a new seat, grips and pedals. Do yall think I need to upgrade anything else? From searching around some have replaced the forks and cranks right off the bat and some even replaced the caliper and levers on their new bikes. I don't know much at all about bike parts to know if the Roscoe parts are decent enough for my weight or not. If I do need to upgrade anything I'd rather do it now while the bike is sitting in my parents garage until Christmas.
