Good job swapping out the saddle. Strongly consider the same for pedals. Also something to catch sweat.
I have a cheapie mag trainer and rollers and go back forth between them. No Zwift. If I want more resistance, I just pedal harder/shift gears. Works enough for winter (where I'm just trying to maintain some semblance of form).
